Bakery, snack bar, café or pizzeria: many businesses sell the same product once to be eaten on the premises and once to take away. Depending on the country and the product, this means a different price, a different VAT rate or both. In bessa you model this with consumption types and pricing levels. This guide shows how to set up both and how your staff switch between eat-in and takeaway at the Sales Point.
This guide describes the setup in bessa and is not tax advice. Please check with your tax advisor or the tax authority which VAT rate applies to your articles for eat-in and takeaway, in Austria with the Federal Ministry of Finance, in Germany with the Federal Central Tax Office.
The principle
bessa has three fixed consumption types: In-house, Takeaway and Delivery. Every line in the cart carries one of them.
A pricing level always belongs to exactly one consumption type and sets a different price for selected articles, e.g. "To go" with its own prices for the consumption type Takeaway. Articles without a price in a pricing level keep their standard price.

Just the distinction, e.g. for reports |
Enable the consumption types on the Sales Point, no pricing level |

Different prices for takeaway |
Pricing level for Takeaway with the different prices |

A different VAT rate for takeaway |
Depends on the country, see VAT rates per consumption type |
Step 1: Enable consumption types on the Sales Point
-
In the bessa Manager, open Locations → Sales Points and select the Sales Point.
-
On the Display tab, assign the consumption types used at this Sales Point under Consumption types, e.g. In-house and Takeaway.
-
Save.
Details in Set up pricing levels for the Sales Point.
A Sub-Terminal without its own consumption types and pricing levels uses those of the Main Sales Point. A Sub-Terminal in the café area that only sells for eat-in should therefore get its own assignment with In-house only.
Step 2: Enter different prices (optional)
-
Under Article management → Pricing levels, create a pricing level, e.g. "To go" with the consumption type Takeaway.
-
On the affected articles, enter the price for "To go" on the Pricing levels tab, see Assigning price levels to articles. With many articles, importing into a pricing level is faster.
-
Enable the pricing level on the Sales Point on the Display tab under Pricing levels.
VAT rates per consumption type
Whether an article is taxed differently for takeaway than for eat-in depends on the country and the product. bessa supports two ways:
-
Companies in Germany: a pricing level can carry its own VAT rate on the article that differs from the rate of the article group. Typical cases are milk-based drinks or tap water. You enter the rate together with the price of the pricing level, see Pricing levels.
-
Companies in all other countries: the VAT rate always follows the article group. If a product is taxed differently for takeaway, create it as a separate article in an article group with that rate, e.g. "Cappuccino" and "Cappuccino to go".
Combo menus of food and drink at one total price follow their own approach, see Book combo menus with food and drinks.
At the Sales Point
If more than one consumption type or pricing level is enabled on a Sales Point, the ordering screen shows a selector bar with the names of the pricing levels and consumption types. On handhelds and in portrait you choose on the Numpad tab.
-
The choice applies to the articles you book afterwards. So one receipt can mix eat-in and takeaway items, e.g. a coffee in the café and a loaf of bread to take home.
-
If you link a customer who has a pricing level, the Sales Point switches to that customer's pricing level and consumption type automatically, see Customers.

Frequently asked questions
Can I create my own consumption type, e.g. "Terrace"? No. The three consumption types are fixed. For separate prices on the terrace, create a pricing level for the consumption type In-house and enable it on the terrace Sub-Terminal.
Why don't I see a selector at the Sales Point? The bar only appears once at least two consumption types or pricing levels are enabled on the Sales Point.
What happens to articles without a price in the pricing level? They are sold at their standard price.
