Change
Change (DE: Retourgeld) is the amount a guest gets back on a cash payment because they handed over more than the amount due. The Sales Point calculates it from the amount given minus the amount due (including any tip) and shows it while you take payment.
How change comes about
There are two ways to record the amount given:

Via the numpad: type the amount and take payment with Cash.

Via the Split payment method: record the amount given as the cash payment — the view keeps Total, Remaining value and Return value in sight.

Where the change is shown

In a dialog on the Sales Point as soon as change is due.

On the customer display.

On the invoice as the lines Given and Return — they are only printed when the amount given differs from the amount due.
Change versus cash float
The cash float is the cash in the drawer that you hand change out from; it is tracked via the cash journal and the daily closeout. Change is the specific amount a single sale returns to the guest.
At cash payment terminals the machines report the amount given and the change themselves and dispense the money automatically, as far as their coin and note stock allows.
