Preparation time
The preparation time is the average time in seconds between posting an Article on the Sales Point and its expected completion in the kitchen or at the counter. It is stored on the article master record and used by the Order Monitor to stagger the display sequence within a Course, so that all articles of the course finish at roughly the same time.

Preparation time (this page) — value per article; drives the staggering on the Order Monitor.

Maximum preparation time — value per course; the upper bound on a guest's waiting time within the course. If a single article's preparation time exceeds this bound, the article is displayed immediately instead of pushing the rest of the course's articles artificially backwards.
